Caribbean Chicken…

I know you are not supposed to praise your own cooking…but tonight’s dinner was one of the best I’ve ever had!  And it just looked so pretty!  🙂

I made Caribbean chicken with mango relish, wild rice, and steamed broccoli.  Oh, YUM!

 

Caribbean Chicken (marinade)

  • 1/4 cup OJ
  • 1 TBSP lime juice (i used lemon)
  • 1 TBSP EVOO
  • 1 tsp ground ginger
  • 1/2 tsp hot sauce (more, if you like)
  • 1/2 tsp dried oregano or italian spices
  • 1/2 tsp garlic salt (or plain table salt)
  • 1/4 ground black pepper (i used more)
  • 3 or 4 boneless, skinless chicken breasts (thawed)

 

  1. combine all in a big Ziploc bag.
  2. marinate 3-6 hours.
  3. remove from bag, bake at 375 F for 30-45 minutes, or until well done.
  4. broil on HIGH, 5-10 minutes, to brown chicken. (optional)

 

Fresh Mango Relish

  • 1 mango (peeled, diced)
  • 1/2 cup diced green pepper
  • 1/2 cup diced tomato
  • 1/4 cup diced onion
  • 1 TBSP EVOO
  • 1 TBSP lemon juice
  • 1 tsp honey
  • 1/4 tsp salt
  • pinch ground black pepper

 

  1. combine all in bowl.
  2. mix well.
  3. keep chilled until use.

    I love Caribbean flavors infused in chicken, so this recipe definitely has caught my attention. I can’t wait to try this. Great post.

    What is EVOO? I’ve seen it in a couple different recipes already!
