Tonight’s dinner: Baked Chicken “Parmesan” — yum! (I am not a fan of Parmesan cheese, so I used extra sharp cheddar.) 🙂
Baked Chicken Parmesan
- chicken breasts, thawed
- breading for chicken
- cheese (to shred)
- tomato sauce (I prepared mine with paprika, italian herbs, garlic salt, and a dab of honey)
Coat chicken breasts with EVOO.
Sprinkle breading of your choice [bread crumbs, panko, crushed fried rinds] over oiled chicken breast.
Bake at 425F for 20-25 minutes.
Shred cheese (of choice) over baked chicken breast.
Spoon tomato sauce over cheese.
I served this with fettuccine (for Hubby) and steamed broccoli.
