Sun-dried Tomatoes & Chicken…

Last week, I discovered a chicken recipe that called for sun-dried tomatoes.  Never having purchased those, I wandered around the grocery store for awhile.  🙂  I finally found them at that little olive bar…the one with all those fancy olives.  First time visiting that, too.  🙂

After making this meal, I’ve stocked up on sun-dried tomatoes.  (Hello, Costco!)

Sun-dried Tomatoes and Chicken, with Brussels Sprouts

  • boneless chicken breasts
  • sun-dried tomatoes, cut into thin strips
  • garlic
  • olive oil
  • italian seasoning
  1. place chicken breasts in baking dish
  2. cover with tomatoes, garlic, oil, and seasonings
  3. bake at 375 for 20-30 minutes, covered
  • brussels sprouts
  • bacon
  • salt, pepper
  1. steam b. sprouts in microwave for 5 minutes
  2. cut off ends and cut sprouts into quarters
  3. fry bacon (i cut mine into bite-sized bits)
  4. add b. sprouts to fry pan
  5. cook 10-15 minutes, until browned
  6. add salt and pepper, as desired
